So true! And that’s why we would like to invite you to a unique New Year’s Eve dinner, combining the classics of French cuisine with carefully selected complements, whose flavours and textures will create a truly original spectacle.
An evening full of culinary inspirations awaits you, accompanied by an intimate atmosphere conducive to New Year’s Eve celebrations.
Six-course dinner:
The menu has been especially designed for this night to transport you to a world of culinary delight dominated by the flavours of French cuisine enriched with aromatic herbs and vegetables from our own garden. The dinner will be perfectly complemented with specialties from the hotel’s confectionery workshop, as well as carefully selected wines from French vineyards.
After dinner, we invite you over to the Grand Pavilion for our Disco night, where at midnight we will raise a toast to a prosperous and auspicious New Year 2024.
Evening program:
7 pm to 10 pm – live music in the hotel lobby
7.30 pm to 8 pm – restaurant open and a welcome cocktail
8 pm to 11 pm – tasting menu
11 pm to 3 am – Disco night at the Grand Pavilion
Tasting menu:
1. Beef sirloin tartar served with mustard salad, parmesan flakes, brown mushroom and black truffle
2. Cream of baked vegetables in a crayfish broth with caramelised salmon, sauted scallops, braised vegetables and dill oil
3. Salmon sous vide served with mussels and shrimps in a cream wine sauce aromatised with wasabi and fresh dill, with a celery and white grape salad
4. Beef wellington – beef sirloin baked in french pastry with mushroom duxelles, young ham served with bernese sauce and baked carrots
5. White chocolate and tonka bean mousse, blueberry sponge, cherry gel, burnt butter sorbet
6. Macaroons with raspberries and sparkling rose mary wine
Tasting menu – vegetarian option:
1. Baked beetroot tartar served with mustard salad, goat cheese and black truffle
2. Cream of baked vegetables with braised vegetables and dill oil
3. Celery baked cauliflower mousse, caramelised buttermilk and burnt butter sauce, with black chanterelles
4. Asparagus in lemon emulsion served with hollandaise sauce, centranthus leaves and tapioca crumb
5. White chocolate and tonka bean mousse, blueberry sponge, cherry gel, burnt butter sorbet
6. Macaroons with raspberries and sparkling rose mary wine
